Fried Skinless Thighs

I wanted to have a ribeye steak tonight and was then reminded that our dog, Bob, is just coming off of a little surgery and might need some leftover chicken in the fridge. I had some zukes and onions all set to go.

I get the skin off the thighs and do a standard egg dip and bread crumb coating.

I like a combo of 2/3 veg oil and about 1/3 EVOO @ around 325º, gives a nice flavor without burning

Had some taters fried with peppers and onion leftover from yesterdays brekky, 90 seconds in the micro, dammed fine dinner

Yeah I know, red wine doesn't go with chicken. Well guess what, it does! Chicken skin is just chicken fat, I get to eat every bite of this without downing a lot of fat, and it tastes great. Thanks for lookin'. RAY
 
LOL! I thought, from your opening, that this was all for the DOG! I was thinking, I love my three Boys and they get leftovers from my plate...BUT...This guy LOVES HIS DOG!!!

One of the BEST Scallop Dishes I ever ate was in an Italian Restaurant. They were seared then served in a Red Wine and Veal Demi Brown Sauce with sauteed Peppers, Onions, Zucchini and Grape Tomatoes. They recommended a great Sangiovese to go along. It broke ALL the Snobby Pairing Rules and was Magical!

I agree, drink what ya like! That scallop dish sounds great (well, minus the zucchini)... been way too long since I've had scallops :(

Looks great, perfect browning on that chicken, yum! Do you think the EVOO makes a difference? Or is that just the way you do it? (I don't mean that to sound accusatory, just curious).

Thank you all so much for the kind comments and likes, I greatly appreciate them. Not having kids Bob is the star of our show and love of our lives, on top of being cute and pretty much a good boy. One more week of keeping an eye on Bob 24/7 and we're home free, then the lampshade comes off and we don't have to sweat him falling into the pool with it on. Bob did get a fried thigh this morning mixed into the rice, have to get another pack today to boil up for him. When the cone comes off it's back to kibble and leftovers, the vet recommends changing over to a kibble with grain, so that's what we'll do.

WaterRat WaterRat . I like the added flavor olive oil brings to fried chicken, but not fried in 100% olive oil. It's just something I've been doing for quite awhile now. RAY

Nice color RAY! Those thighs look tasty!

Have you tried just classic olive oil vs the blend? I use the classic for pan frying for the taste all the time..... it also has a higher flash temp the EV.

Oh yeah, my mama fried just about everything in straight olive oil, chicken thighs is the only time I do that mixture with the veg oil. I like to fry fish in a combo of olive oil and butter, yum! RAY

I do the olive oil butter all the time! It’s my go to for about all frying. The exception is when I want a really good seat then I use grape seed oil
