I took pics of this for some reason, so what the heck. Hey, I DID grill the pork loin so it somewhat qualifies as outdoor cooking!
I had this leftover garlic herb pork loin I had grilled, some leftover rice from eating out at Made In Asia (I call it made somewhat adjacent to Asia) and I had made this sauteed delicata squash with onions and stewed tomatoes as a side for the pork loin (also some steamed baby potatoes with EVOO and herbs but all those got ate up!). It was very good on its own, but not enough for a proper side dish again.
I decided to go the Asian flavor direction and put together some of my stir fried rice sauce and stuck with the theme with my Asian broccoli stir fry, the sauce is in the same lane as the fried rice sauce. You can see I toasted some sesame seeds there too.
I chopped the leftover squash dish small, set a good crisp on the rice in the skillet, mixed the squash mixture with the fried rice well, then tossed in the pork loin I had cut in to strips. Poured the fried rice sauce evenly over and quickly mixed it all well in the pan, avoiding overcooking that very tender pork I had grilled to perfection before.
Meanwhile I was also cooking my Asian broccoli stir fry.
Made a good meal and ate up those leftovers! We always keep a small broccoli crown in the fridge every week.
