Fresh Trout Cooked Two Different Ways

I started trout fishing again after 46 years!
I bought a new truck and currently getting it set up for overlanding to start the exploring.

I made two trips in eight days and of the seven nights camping we had fried fish four nights and I needed a break from that.
I was talking to a fella on the steam and he said he smoked his. Once home I did a google search and found one fairly decent.
The fish was opened up the best I could without cutting myself.
Salt & pepper was applied to the cavity then a few chunks of butter then some lemon slices and fresh dill sprigs.

They were smoked at 225 along with a smoke tube and cooked for two hours then I bumped up the grill to 300 for a half hour as I can’t do raw fish.

The next night I did the same except I used Old Bay Blackened seasoning but grilled the on the sear grates and oiled them good to prevent sticking.

I like the first slow smoked method the best cause the lemon and dill were very prevalent and had a wonderful but different taste plus the hickory flavor was present.
The hot cooked method was good but I could hardly taste the lemon or dill.

Looks good! I love fresh trout. Have you tried filleting the trout? You get no small bones.
Yes we filleted them we did our fish fry’s.
Yes the way I did these two meals bones come into play! It makes me eat slower and not over eat which I tend to do
 
trout are one of my favorite chews. your looks great!

try fresh fillets in the skillet with bacon grease. season them up and start browning the top of the fillet first. get that brown then flip over before it gets crumbly ya know. then cook hard the rest of the time until you get that burnt crispy edge around fillet. the bottom will have a nice crust and really enhance the flavor.(sort of like salmon patty crust works) then cook your eggs in there and enjoy the combo! maybe better than bacon! maybe :)

Thats how the local fishing guides cook their clients shore lunches around here! I live by 3 rivers…the Norfork, the White and the Buffalo rivers. All have great fishing!

That looks great. I grew up on that but you are making me feel old. The last time we fished fresh trout my niece was 7 years old. She is now 25 and things have changed so much.

I got home last night from another 4 days of fishing and I brought along some bacon grease. We only ate fish one morning for breakfast. Your tip was a hit and I think I’ll try it again tonight on the deck.
