Yesterday I posted about cooking a fatty and whether to freeze prior to cooking or after. Everyone responded, cook then freeze.

My question is. What do you recommend best to reheating and preparing it when you are ready to eat? everyone just throw the whole thing into the microwave? Probably cant cut a chunk off while frozen. Do you cut it up into portions prior to freezing?

Thanks for your awesome words of advice ahead of time. You guys, and gals, ROCK!

Cut it up into likely servings...1,2,3 people...whatever your needs are. With the foodsaver, you thaw it a bit and pop it into boiling water...I LOVE my foodsaver!
TIP: save a bit of cooking juices from that butt, brisket, whatever. Add to package of what you are freezing... helps moisture and tastes WAYY good. Especially if you re-heat in a low temp oven.

also, as i have posted here before...........rice steamer werks GREAT........water, beer, or juices saved from other smoking projects......all werk great

I slice it in half throw it into those sandwich sized ziplocks and grab a bag for work. Holds about a pound of meat. Works great for pulled pork too!

For long term freezing I use the Vaccum sealer bags.
