Found these in my freezer, turned out great (Kinda Pastrami)

I found these last week when I was cleaning out my freezer, not sure how long they were in there, a few years I would guess. Thawed in the refrigerator for a few days and soaked for about 3 hours with several water changes. ( My body does not like the high salt content in them or the cheap deli meats.)

I drained them well and seasoned with garlic, black pepper and I used some pickling spice I had. Into the Cookshack at 7:00 Am at 225° and about 11:30 they were at 170ish° so I bumped up the temp to 250° and took them out about 1:00 at 190ish°.

They seem to have turned out well much like I remember when I used to make them more frequently.

I think I found them the last 2 times I cleaned my freezer also, just put them back in and kept forgetting about them, until I put them up front so I would remember.
