Last time I was racing in Pueblo I was there during the time they were harvesting these green chilies. They were amazing and they put them on everything. We had this great pizza from a restaurant in the same parking lot as the hotel that covered a pepperoni pizza with those chilies and it was amazing. I was wondering what kind of chilies they are and do they make spicy ones?

They are known as Pueblo green chili's or technical term, MiraSol's Mosco.They are a meatier chili and are hotter than hatch. The other difference is right there in the name of the two. Hatch are grown in Hatch, New Mexico... and Pueblo's are grown in Pueblo Colorado. And you can get them in mild, med and hot. I believe you can order online from Mauro farms or maybe Milberger's. I get mine from Musso's farms usually but not sure if they ship.

They also sell a “hot Anaheim” that I think is actually a Big Jim variety that is excellent in flavor as well. We drive all the way across the state to buy our chiles in Pueblo. They are excellent.

I believe the big Jim's are a bread of a few different New Mexico chili's and Anaheims and the Aji Amarillo pepper. They really are fantastic. One of my favorites for sure.
