Decided to try something different yesterday. It was warm but not as hot as a typical Central Texas June afternoon so a warm meal was not out of the question. Thought through a few options and this is what I came up with. I knew we had a watermelon in the fridge that needed to get cut up and eaten and having grilled it a few times in the past knew it'd be good. Got the tenderloin tips out of the freezer and started the ball rolling.
Tips with a nice dose of that insane Worcestershire sauce, a little salt, black pepper, and garlic powder
Cut up a bunch of veggies
Watermelon on the grill first
A little char then flip
Meat and veggies on the flat top
Cooking along nicely
Mix it all together and let cook down just a bit more
Meat and veggies all done
Watermelon done
Dinner plated with some broccoli & cheddar rice
This was one really good meal. The tips were melt-in-your-mouth tender and a beautiful balance of flavors from the seasonings. Veggies were done exactly as we like them; warm and slightly softened but still some texture to them. The watermelon was superb...but it always is when we grill it. This is a favorite around here. The sugars in it caramelize and create a delicious flavor that's a perfect accompaniment with the beef. It also smells amazing while it's grilling. The rice was an out of the box side dish (Knorr) but still really good along with the rest of the dinner. Tracy was very surprised on one hand and really disappointed on the other hand. She was surprised at how good the tips and veggies were but disappointed that there were no leftovers for her lunch today. This one certainly goes into the "quick and easy" meals category. Did not take long at all to put together or cook.
