Yeah , but you shouldn't be . Here's a link to the USDA website . Dave Omak was the one that opened my eyes to the tubed beef package at inspected processing plants .
Talked about how the meat to be ground is tested before and after grinding , then sealed in the tube . No water added .

Real good looking meal there. I still cant bring myself to do smash burgers because unlike you I am a medium pink center guy.

It's been a while since I had ridged seasoned potato chips like that.
I'm beyond prayers at this point . I'll be judged for worse than that , besides I'm in the eat meat everyday religion .

I saved a 5.5 oz. ball for my lunch Friday . To nasty to go outside , so I did it in a cast iron skillet on the stove . About 5/8's thick , and did the " flippy - flip " until 145 internal .
Rested 5 minutes , pickles and onions with American cheese .
Just a blushy shade of pink all the way through .
Really good ! Need to do it again and see if I get the same results , then I'll sell it to the kids .

I bought 1 Tri-tip on sale , for $8.99 a pound . Normal price , if you even see it is $18.00 a pound .

Yeah , the knuckle sits on top of the section that has the tri-tip . If you see sirloin tip , sirloin cap , or sirloin center cut at the store , that's all from the knuckle . It's an awesome hunk of beef . It's down to $5.19 a pound here . Gonna go this week and see what's in the case , and check the sell by dates . Then I either buy , or come back a day before the sell date .

If you decide to try the knuckle , the last time I broke one down I took some pics of the process .
Trii-Tip used to be $4/
Price jumped around and my last purchase was $5/ but the fat layer was almost 40%
I don't like rare cooked TT on a regular basis and my wife is a hell no.
Her favorite is when I cure it for pastrami.
Thanks. Sirloin tip is pretty versatile and should make a decent pastrami or dried beef.

You guys got me craving smash burgers bad. mixed 2 lbs lean ground chuck w 1 lb fatty ground brisket. I too like a nice medium to medium rare thick burger but the crust you get on these thin boys is well worth the trade off. Good to mix it up. Some times you feel like a nut, sometimes you don't, lol. Smokin pan, smash with a square of parchment, american cheese, pickles, onions, garlic mayo and mustard. On a toasted sesame seed bun. OHHHH Man. Just got a request from my son for seconds. Have a bunch of 4 oz balls in the freezer too. Thanks all!!!!

It was right at 70 degrees today . Sunny with a lite breeze . So I cleaned up the 28 " Blackstone and thawed some 80/20 beef .

Haven't been grinding my own for a year or so . Beef cuts got crazy expensive , so I've been buying the 80/20
" Tube-O-Beef " form GFS . It's actually really good . Great flavor , and cooks up nice . Been getting it on sale , under 5 bucks a pound .
Steamed the Blackstone and oiled it up . At the ready for cook time .

When the beef thawed , I portioned it out into 4 ounce balls .
6 balls , so a double makes around a half pound burger .
Staged everything I needed to cook out back , and waited for the kids to get home .

Then pre heated the BS , put the burgers on and smashed .
Thin sliced red onion on top , then flip when ready .

Used Blackstone Whiskey burger for the seasoning on the beef .

Puts a great crust on the burgers .

Flip the rest , with onions now down .

Then flip back over and add the cheese .
On the cutting board and in the house . This gets goin' fast , so not time to get a pic of everything .
I'm all about American cheese on burgers . Kids like pepper jack .

Kinders Cowboy butter on some corn , and air fried .

Grill plate and air fry at 390 in the Ninja . It's fantastic .

Had chips and some french onion dip along with the corn .

Thanks . Yeah , I'm ready for another round myself . I'm not against store bought ground beef , except for the price . Grinding your own is the best , but for the price trade off the tubes are a great option . I cross cut them in 1 1/2 pound sections . Vac pack and freeze .
