THAT'S A FINE LOOKING BURGER RICH, NOW I WANT ONE! DOUBLE BURGER, DOUBLE CHEESE, GRILLED ONION, GOTTA LOVE IT. I'VE NEVER MADE A SMASH BURGER, THIS WILL INSPIRE ME TO GIVE IT A SHOT THIS WEEKEND, BE 85º HERE ON SUNDAY.

I'm beyond prayers at this point . I'll be judged for worse than that , besides I'm in the eat meat everyday religion .

Nice Rich, If the snow ever melts I will get to my grills, griddle and smoker again.
Been awhile for me too . 2 nice weather days yesterday and Teusday . Was nice to be outside .

I never thought to use the Ninja griddle plate for corn, If I can find any corn on the cob I am going to try this.
Cliff , he does carrots in there too . Hot honey and balsamic vinegar . Crazy good .
He's got a flare for flavor profiles and spices .

I know you like your burgers a certain way , but these are really good .
I use 4 oz. patties , and stack 'em .

I have flat out resigned to just suck it up and pay beef prices.

I just can't do store bought ground, I think about the cheapest I ever see it is at right at 5 bucks a lb. I can smell it. And the smell ain't appetizing.

I hate it, but I'm grinding up 6 dollar a lb chuck and 5 dollar a lb top round. Mixing one and one is working out good, as long as I pick fatty chucks.

My frugal nature hurts bad doing that. But hell, it's a buck.50 a lb over preground. If I cook a 3lb meatloaf I'm out less than 6-7 bucks over had I bought preground.

This time last year I was pretty proud that I hadn't topped 4 bucks a lb for ground beef.

The year before that - $3

Shit, those were ancient times 😂

Guess next year it'll be $7 or $8

I kicked up my part time gig a few months ago. I wanted to save more, but with utilities and beef I ain't making no 'ground' up in my checking account.

I just started Mounjaro injections. They supposed to make me want to eat less. I wish they'd make me want to eat more chicken lol.
 
More snow coming this Sunday night and I have a 6.10 am Monday flight out to FL....yeah will probably be more like Wednesday.

I just can't do store bought ground,
I don't either . I buy the chubs that are processed at the meat packing plant . Big difference for me in quality and flavor . I get them in a 10 pound size .

I watch meat prices pretty close . I get all mine at Gordon's food service . I go weekly and check prices real time .
Brisket is hoovering on $5.19 a pound . Was all the way to 6 bucks . That's almost double what it was a year and a half ago .
Beef knuckle / Sirloin is finally coming down some . $4.19 was a good price . Used to be $3.36 ,
been almost 6 bucks for awhile .

I was buying and grinding strip loins . I was getting them between 5 and 8 bucks a pound .
I had even found some that were $2.99 a lb.
So I stocked up and ground it all . Think I bought 7 total . Did some as pre seasoned frozen burger patties . Cooked from frozen on the gas grill worked great .

Tri-tip was my multi purpose cut, but the price jumped again and the quality fell.
Beef knuckle is the bargain at Costco Business Center these days for $5/. I know you use the primal but I have no experience with it.
GFS is not an option due to the location and traffic nightmare

It was right at 70 degrees today . Sunny with a lite breeze . So I cleaned up the 28 " Blackstone and thawed some 80/20 beef .

Haven't been grinding my own for a year or so . Beef cuts got crazy expensive , so I've been buying the 80/20
" Tube-O-Beef " form GFS . It's actually really good . Great flavor , and cooks up nice . Been getting it on sale , under 5 bucks a pound .
Steamed the Blackstone and oiled it up . At the ready for cook time .

When the beef thawed , I portioned it out into 4 ounce balls .
6 balls , so a double makes around a half pound burger .
Staged everything I needed to cook out back , and waited for the kids to get home .

Then pre heated the BS , put the burgers on and smashed .
Thin sliced red onion on top , then flip when ready .

Used Blackstone Whiskey burger for the seasoning on the beef .

Then flip back over and add the cheese .
On the cutting board and in the house . This gets goin' fast , so not time to get a pic of everything .

Great looking burgers Rich, I would be stuffed after 2 or 3 of those.

And this has been a rough winter up here this year, and another storm coming Monday and Tuesday. I might have to wait an extra day or 3 to finish off the BBB as it will be ready to come out of the brine on Tuesday.

Now I want a cheeseburger.

Yeah , the knuckle sits on top of the section that has the tri-tip . If you see sirloin tip , sirloin cap , or sirloin center cut at the store , that's all from the knuckle . It's an awesome hunk of beef . It's down to $5.19 a pound here . Gonna go this week and see what's in the case , and check the sell by dates . Then I either buy , or come back a day before the sell date .

If you decide to try the knuckle , the last time I broke one down I took some pics of the process .

Same here . I do buy a frozen patty from GFS that I throw on the gas grill for a quickie .
Never had the best results grilling thicker burgers , because I don't like medium rare ground beef . I can eat a steak mooing ,, but ground needs to be cooked through .
Blackstone / smashed takes care of that , plus the flavor is awesome .
