So I've been working two jobs for along time & haven't had much time to smoke or post. Today I got a 3.4 LB flat. I know it's a little guy but I thought what the heck lets inject! I I inject straight beef broth & then rubbed it all down with some SPOG. Let it sit in the fridge for the night


Got the WSM ready this morning


On the grill & going


Got a Pastrami ( dudestrami ) going next to it! One hour in & I've got the Party-Que going at 250. Should move right along today.

Well they've actually been on the grill for two hours. I just probed both. Sitting good at 150
 
Temps at 156. Almost time to pan & foil. Seem to go right through any stall? Not sure what's going on right now? I've been getting ALOT of smoke all of sudden. Turned off the party que for a moment in case the small burst were catching the wood on fire
