First try at summer sausage

I want to tray making summer sausage this weekend for the fist time and am looking for a good recipe. I have insta cure #1, binder and ECA. Want to make something without a prepackage mix i now some of the standard ingredients: mustard seed, garlic, black pepper. Just want a tried recipe to start with. Also want to try to make some snack sticks as well. Will be using a beef/pork mixture to try this before i adapt to venison.

I mix 73% ground beef with venison 50/50 to get 14% for the summer sausage and that is pretty good. Try 80/20 beef if you want.This is a simple Sweet one My wife has a recipe like this and its her favorite.

I'm following, I need some new recipes. Hopefully Jalapeno cheddar one. I have 14oz of jalapeno and no recipe I have liked yet.
