I have been smoking a while now but for some reason have never gotten around to doing Tri Tip. So I upgraded pits last Friday and did stuffed pork loins Sunday, BB ribs Monday, and decided to do Tri Tip tomorrow. So I went and bought my pack of choice Angus tri tip today and there were 4 in it. Now usually I like to trim and rub my meat the night before but since there were 4 and my oldest had a few friends over I figured what the hell, I'll do 2 tonight and 2 tomorrow. So while pit was warming up I trimmed and rubbed 2 of them and threw them on. I just pulled them out to rest. On the comical side...... I am a big fan of reverse sear but other grill isn't set up yet since winter..... So how do you get a decent redneck reverse sear??? Why a propane torch of course! Lol. I will add money shots when I slice.

Trimmed, rubbed, and in the smoke

Ready to sear

Post redneck sear

Searing tool lol

Looking good. Had tri tip for the first time a few weeks ago from a local BBQ joint. These have me drooling already.
