Hey all, I've wanted to try Tasso for quite a while now & was able to get some curing yesterday. This is a small batch, used Len Poli's recipe. Gonna let this season/cure til next Sat when I'll be able to smoke it. Can't wait to try this stuff.

Just a quick update, unfortunately the fridge this was in the door was left open a bit... It's mainly our secondary beverage fridge, one that's not used a lot.. not sure how long it was open. The Tasso was not cool enough to the touch for me to feel safe proceeding with the process, not worth the risk. It was 1 1/2 lbs, I hate to waste anything... but feeding my fam food that has any question behind it is not worth it to me! I guess, learn from my mistake or over sight & check your fridges on a regular basis as I am doing here forward. I do have another butt in the freezer that'll be turned into Tasso if not this weekend, the next.
 
Damn that sucks Justin. Better safe then sorry for the family.
