Hey all, I've wanted to try Tasso for quite a while now & was able to get some curing yesterday. This is a small batch, used Len Poli's recipe. Gonna let this season/cure til next Sat when I'll be able to smoke it. Can't wait to try this stuff.

Here is a Tasso recipe that doesn't need any cure from Chef John Folse.
