Well, I have an Akorn Jr Kamado, seasoned the grill yesterday and prepared some chicken wings and drumettes with some rub and put in the fridge overnight ready for the first time smoke this morning. Trying chicken wings just so I get some idea as to how to control the temperature.Pretty cold and windy outside here today which I resume did not help any. Had to chase the temperature around a little bit, and only used the lump charcoal, with no other wood for smoke as I wanted to see what the flavour was like without it, just so I could gauge the change in flavour next time. Smoked at around 230 to 245F. Anyway, they turned out great pretty spicy and the meat fell off the bone, so, all in all, I was pretty happy with the result.
