Hey everyone, 

First time poster, long time lurker.

Thanks for all of the information that you all post here about techniques and such. This was my first attempt below at smoking anything. I am planning on smoking a turkey for Christmas Eve so I wanted to get some practice in.

 
Welcome to the SMF!  That is a nice looking bird.

What temp did you smoke at and how was the taste?  

I usually smoke my poultry at a higher temp to give the skin a little crisp, about 275* - 300*.

I smoked the bird at around 250 (the highest it got was 275 but it was sort of cold outside on Sunday).

I used cherry and apple chips and it had to be the juiciest and tastiest chicken that I have ever prepared. I used a can of a little pineapple and stout beer liquid also to make sure it would not dry out. 

For Christmas Eve since my Turkey is about 18lbs, I think I may spatchcock (spellling?) it so that it can get out of the danger zone quickly. Also, I may just use Cherry chips to give it that nice red look that I see alot in some of the Qviews here.
