Im still new to smoking and things have been going good, but my father in law wanted brisket. He offered to buy in, so i jumped on it, but he bought single packed "thin cut beef brisket". It isn't the packer, point, or flat (I assume it is closes to flat) cuts that I have been reading about.

Has anyone had any experience with this type of cut, rather than the larger briskets?

Google tells me this is just the flat cut; likely more trimmed then what alot of us get. If you feel unsure about trying it as a normal brisket look up SmokingAl. A while back he had a method for a small brisket that involved some french onion soup IIRC, looked like it turned out stellar.

Thank you. I googled it before asking and kept getting flat cut info, but nothing really all that clear (didn't spend much time). The small weight ( 2 @ 2.5 lbs each ) really mess up my estimated cook length. I really dont know how long they are going to take. Trying to time it right for dinner.

If it finishes early, is there any method outside of putting it in a cooler wrapped in a towel that will do the same as the cooler?
