Just put the meat on and got a 4 bone meaty Beef rib from the butcher and looks real good!!!! Little SPG on this meat extravaganza. updates to follow. Got my sprayer of beef broth ready to go. Hickory blocks and some charcoal offset on the weber performer. Cheap beer and football later. I'd say its a Sunday all the way.

Looks good! But.... you might not be eating until the Vikes/Seachickens come on depending on your temp. You can wrap once your IT hits 150-160 to speed thing up and bump the smoker to 300.

i have it at 250-270 area. i am thinking it might be 6 to 7 hours at that temp
 
tastes amazing, little over 8 hours, if i would change anything its start earlier and let it get to 210 internal. but all and all great meal!!! two bones fell off which was real good
