First time Bacon Jam with Q-view

I saw on Groupon today Bacon Jam sold by Skillet.  So that peaked my interest and I started looking and sure enough Martha Stewart has a recipe.

  • 1 1/2 pounds sliced bacon, cut crosswise into 1-inch pieces
  • 2 medium yellow onions, diced small
  • 3 garlic cloves, smashed and peeled
  • 1/2 cup cider vinegar
  • 1/2 cup packed dark-brown sugar
  • 1/4 cup pure maple syrup
  • 3/4 cup brewed coffee
Then I found one on Allrecipes.com

  • 1/2 cup bacon drippings

  • 2 large yellow onions, cut into very thin slivers

  • 1/2 cup brown sugar

  • 1/4 cup garlic, minced

  • 1 teaspoon ground cayenne pepper

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1 cup bourbon whiskey

  • 1 cup brewed coffee

  • 1/2 cup sherry vinegar

  • 1/2 cup maple syrup

  • 3/4 cup ketchup
I kinda combined and changed both to come up with what I am making.

Start with 2lb Bacon



I like cooking bacon on the Forman and having the grease drain away.  All the reviews I read said to much fat so I cooked it well done.


While the bacon was cooking started the onions with 1/3 cup Bacon grease.


Add the Garlic.  I cheated and used jarred.


Then after the onions cooked down I added.

1/2 cup Brown sugar

3/4 cup coffee

3/4 cup whiskey

1/2 cup balsamic vinegar

1/2 cup maple syrup

1/2 ts ground nutmeg

1/2 ts cinnamon

1 ts red pepper


Bring to a boil and simmer for about 5 min. Then put in crock pot and add the chopped bacon.


I used a submersion blender to chop it all a little.  Now it cooks down for a few hours and we will see.  The smell is so good filling the house.

You should be able to use that with...............just about anything!

This Jam is amazing.  It has many levels of flavor and a kick.  I would have liked to put more red pepper in it but I cook for two.

My dinner tonight leftover Ribs with Bacon jam.


I think this will be great on Hamburgers or hot dogs maybe a Fattie filled with it and cheese.

A little on a PP sandwich.   If it lasts… LOL… Its good on crackers.

That looks great Stan. We love homemade bacon jam and always have a container in the refrigerator. The recipe and method I use is similar to yours, though I also created a more savory version which includes fish sauce and chipotles en adobo among other things.

There's a multitude of uses for the jam, which are limited only by your imagination. For openers, it makes a killer PBJ sandwich.

Enjoy. It won't be around long.
 
 
Never heard of it before.   It does sound really awesome!  My to do list is getting even longer....

Thanks Wes, It is really good.  The wife said you are going to make yourself sick if you keep eating that.....but there were still crackers left.... 

All most I didn't use ketchup and I changed most of the amounts.  Both recipes called for two onions but I used only one and I think that was a good choice.

Yea, it will become a staple.

Here's an alternate version with a little more "Oomph":

Chipotle Bacon Jam
1 pound of bacon
5 cloves of garlic, minced
1 medium yellow onion, minced
2-4 chipotles en adobo (depending on the level of heat you can tolerate)
2 teaspoons adobo sauce (from the can)

1 tablespoon fish sauce
2 teaspoons ancho chile powder
1/2 teaspoon ground allspice
1/2 teaspoon ground Mexican hot chocolate powder
1 cup of brewed coffee
1/4 cup apple cider vinegar
Black pepper to taste

Cook the bacon until fat is rendered, but not too crisp. Cut cooked bacon into two-inch sized pieces.

On medium heat, cook the onion and garlic in two tablespoons of rendered bacon fat in a medium-sized pot until soft and translucent, about 10 minutes. Add the cooked bacon, spices, apple cider vinegar and coffee. Simmer on low for two hours, stirring occasionally. If jam starts to get dry, add water, 1/4 cup at a time.

After two hours, place bacon jam into a food processor, and puree for two or three seconds, tops. You just want to bring it together but still have some chunks.
 
Looks great! For those that don't know, Skillet started in Seattle in a little Airstream trailer. I have been lucky enough to come across them and get a burger made with their bacon jam. Like the BBQ Pit Boys say, "That tastes GUUUUD!!!!"

They now have a brick & mortar restaurant in Seattle, and as you saw, sell their bacon jam online. It's worth every penny, but someday I'll try to make my own, like you did.
