Hi all!
Well I got a nice fat bird today and plan to try my first spatchcock style tomorrow. My question is; do I brine after I spatchcock cut or before? I'm a big believer in brining birds..

I don't know that it makes a difference.. But I have always brined mine after it was spatcocked.. IMO I feel that really opens up the meat to allow for the brine to really get in there..
 
I don't think I would have a preference, but Nate has a great point about the brine getting into the open meat.
