So I decided to be brave and try some smoked salmon. My local grocer was having a sale so I saved a few fillets to smoke. I used just a marinade:

2 tablespoons bourbon
2 tablespoons brown sugar
1 tablespoon Dijon
1 tablespoon soy sauce
Some salt n pepper (soy sauce is pretty salty)

Got my trusty modded ECB up to temp at 210 with applewood n charcoal and added a few fillets in a baking my pan. Cooked to 150 degrees, and I have to admit, I was pleased with the results. Now Im ready to try it for a family party. Easy prep, cooks fast, and tasty as hell. You can add a glaze if you want... I used a creamy lime vinaigrette to pour over them or I left it out on side for the kiddos. Here's a pic before the vinaigrette:

Once again, all tips, hints, recipes, and motivation comes from this SMF group. THANKS!

This Cali boy is turning some heads...."What smells so good Mikey?"
