First ever go at this...was fun and challenging keeping the heat right where it should be (yeah-right!).
I cut handles from shaker basket ($15) I found on Amazon.com and proved a nice fit with the water pan. If anyone is interested in the basket, let me know and I will shoot you the link. No other mods to this smoker yet...I wanna play and see how it performs for a few smokes to evaluate what area's need improvements before assuming anything.
For Spare Ribs: Used mustard, then a sweet rub and sit overnight...did 3-2-1 method. Came out pretty good. Not exactly 'falling off the bone' but very tender and moist. Best I've ever made
For Chicken: made a brine and let sit overnight and some chicken rub before smoking.
Charcoal Briquets; Applewood/Cherry chunks
