I decided to break the Oklahoma Joe in on the 4th of July. First up I had to clean the thing from my test run. Here is a little tip. A sturdy gallon jug cut in an angle cleans these round offsets really nice. Cheap too!

I loaded Joe up with 4 racks of BBs..... a Corned Beef..... I also smoked a fatty...... some ABTz and a mess of teradacktile eggs.

These things actually started out as white eggs. Red took them and made some awesome deviled eggs out of them.

I wanted to do something different with the fatty so I cut up a mess of fresh jalapenozzzzz and some banana peppers. First I had a layer of pepperoni..... then some roasted chili peppers...... a mess of cut up jalapenozzzz and banana peppers along with some chopped green onions.... then a layer of pepper jack cheese and a couple globs of cream cheese. I wrapped it up in bacon and cooked it till almost done then slapped BBQ sauce on it to finish it up. It was tasteeeeee!

I did some of the ABTz the way I always do with the jalapeno and the sharp white cheddar. This time I made up a few with the banana peppers and put in fresh mozzarella along with cream cheese and topped them with sausage. Yowzah!

Baby Backs came out nice. I have to say though.... I'm always dissapointed in the flavor and texture of the BBs that are packed in solution. I'm just going to have to quit buying them even if they are on sale.

Here is everything plated up. On the way to the store this morning one of the local farmers had a wagon full of fresh corn out of the field. It was fall off the cob tender and sweet. Red made up a mess of green beans with new potatozzzz. Can you believe we didn't have any company. Talk about leftovers. Looks like I'll be eatin high on the ol Hog this week. I pulled the Corned Beef and have it finishing up in the oven. No pics but I taste tested it and it was yummy. There wasn't any room for it on my plate anyway.

Very nice looking everything and thank Red for the wonderful deviled eggs. I can eat a dozen at a time if I'm not careful, and you alls looked delicious!

Not quite sure how the angle cut container helped clean the smoker, but points to you anyway for a great smoke and perfect q-vue!

Love deviled eggs - and I never think to make them. May have to remedy that. Good looking grub.

Thanks Rivet. I use this thing to clean the ashes out of the bottom of the burn chamber after it has cooled. Works great in the round offset firebox. They sell a tool to clean the ashes out. This was free and works just as well on the cool ashes.

I use a gardening trowel/spade thing. Its concave enough and fits just right in my SnP's firebox.
 
Can't believe I missed another great thread.
So many from the 4th it was sooo easy to get lost in the commotion.
