Tahlequah, OK
I originally planned to just smoke chicken and ribs last Saturday to break in my new 340G but as usual plans change.

After a tornado decided to blow through our area Friday night we found out some friends lost their house so I loaded up the smoker to take them dinner. I also loaded down the stick burner with brisket and pork butts but forgot to take pics. It's been a while since I actively monitored two smokers at once and to be honest my time management sucked.

The chicken and ribs I originally laid out to smoke still fit on the bottom shelf with no issue. It never ceases to amaze me how much bigger the MES40 is than the MES30.

I was ready to pull and wrap the ribs at this point. They were right around 165 IT and I was happy with the pull back so far. Everything was moving smoothly.

Sadly that's the last good pic of this rack. I wrapped them with some foiling juice, put them back in the smoker at 200 (dropped the temp because I was making deliveries), loaded everything else up in the Tahoe and went out to make my deliveries.

By the time I got back home I was exhausted and completely forgot they were in the smoker at all. About 9 hours later I awoke to the finest looking rib jerky you'll ever see. Apparently the 3-2-11 method is not appropriate for spare ribs. I didn't bother to take a picture of that mess.

All was not lost though. All told between the two smokers we took about 3 meals worth of food to our friends and their family helping with clean up. I also dropped off several serving trays of goodies and a couple quart jars of homemade sauce at the police department and fed three shifts worth of dispatchers and officers who had all been working their butts off for about 24 hours at that point. Been there done that and I know how good hot food tastes when you're working a mess like a tornado.

I also had enough time to open up the trusty dusty MES30 that quit over Thanksgiving and made me buy the 340G in the first place. Guess what I found.

I already ordered the high temp spades and shrink wrap. Hopefully the 30 will live again soon.

That's some good lookin 'que brother! And good on ya for taking care of your neighbors and first responders after the storm. I guess that tornado finally blew itself out somewhere between Tahlequah and Kansas...watched the local weather guys tracking it for more than an hour. I couldn't remember when a tornado had stayed on the ground so long. Cut a swath from down around Porum to up past your neck of the woods.

It was quite a storm. It missed my in laws south fence by about 100 yards. They live out at Eldon. I cut two rick of wood clearing off the county road between my house and the highway and we were a good 15 miles from the tornado itself. It isn't often that one stays on the ground that long but luckily it doesn't sound like there were any major injuries.

Yeah I've seen video and photos of lots of damaged/destroyed homes, barns and other property, but thankfully no fatalities or serious injuries. So thank God for that!

Are those three Oklahoma prime ribs on the top shelf? Smoked Bologna sounds good. I haven't made that in a couple years.

Yep. It's hard for me to fire up the smoker and not have at least a chub of bologna in it. With all the choices of protein to smoke I always come back to bologna as a guilty pleasure.
