I smoked a 4lb sirloin tip roast, I split it up, cause my wife and 2 of our boys like their beef well done, while the other 2 boys and I, like it medium rare...

Here they are after being seasoned, split and wrapped in saran wrap, and put in the fridge for overnight...



I took the medium/rare to 144* , and the well done to 168*, wrapped them in foil and then a towel and stuck them in a cooler for about 45 minutes.

here is the medium/rare after the cooler...



The medium/rare all sliced up...




and the well done...

I was trying to get a good pic of the smoke ring, but maybe you're right, no well done for the camera either
