Just a suggestion, forget the thermo in the side of the drum, keep using the turkey thermo. Why? Because you want to measure the temp in the center of the drum where the meat is, not out by the side of the drum where the meat is not. Your UDS will run 40-50F hotter in the center over the coals and under the meat than out by the sides of the drum. I think a lot of UDS guys think they are running at 250, when they are actually closer to 300 due to where they measure the temps. Put that stubby temp gauge in the center of the lid, and monitor the temps below and above the meat.
