Just a suggestion, forget the thermo in the side of the drum, keep using the turkey thermo. Why? Because you want to measure the temp in the center of the drum where the meat is, not out by the side of the drum where the meat is not. Your UDS will run 40-50F hotter in the center over the coals and under the meat than out by the sides of the drum. I think a lot of UDS guys think they are running at 250, when they are actually closer to 300 due to where they measure the temps. Put that stubby temp gauge in the center of the lid, and monitor the temps below and above the meat.

Just my experience, and my .02 YMMV.

Good job on the build! It's amazing how well they cook when they are so easy to build.
For the thermo, I use a probe in mine along with a probe in the meat. I copied an idea from a user here and drilled a hole through a chunk of wood to hold the probe right at meat level. this allows you to put it where you want.. Look to the left in this pic..
