A couple days after doing my first fatty of 2019, did my first pork butt of 2019 and was by far the best pulled pork I've ever made. I used a combination of Jeff's rub and another rub called Sweet Sensation. Got it from a book I got for Christmas a while ago. I injected it with apple cider, apple cider vinegar, and about a tablespoon of rub mixed in. I wrapped it in foil at 145 when it stalled there, and kept it wrapped until it hit 175. Around 160 I also put a coating of butter, rub, and maple syrup combination on top. After I unwrapped it, i added more rub on to try to get some kind of bark back and bumped up my Traeger from 225 to 250 (actual temperature typically runs about 30 degrees more than the setting most of the time). Overall it took 12 hours to smoke a 8 pound butt. Didn't get a great bark on it, but with how delicious it turned out, I'm not complaining.

I couldn't resist taking a small sample before I took a finished picture.

Yum! I haven't done a pulled pork smoke yet this year but have a couple butts in the freezer just waiting.

Great cook! How did the injection go? Was the flavor there? I have brined a few before, but, rub injection is on my list to do.
I've done injections before where I didn't notice a difference in the taste, but it seemed like it added more flavor this time than others. I've never brined any of my pork before so I can't really compare it to that.

Looks pretty delicious to me! I’m curious, could you taste the maple syrup at all in the bark?
When it was fresh off the smoker there was a subtle taste, but since its been sitting in the fridge it definitely lost it.
