Hello everyone, this is my first post but I have been a member for a while just lurking and reading posts.  My name is Jay and I have a homemade smoker that I have been using for a while now and love.

I tend to smoke a lot of pork but have branched out to smoking about anything I can get my hands on. 

I have a question about smoking cheese which I did a couple of weeks ago, when I opened the baggies this morning there was a small amount of mold on the cheese, is that normal?   I don't have a vacuum sealer so I am sure I did not get all the air out.

If air gets to cheese it will allow mold to grow, just trim the mold off with a knife and eat the rest, it will be fine! 
 
Welcome to the forum!

When I cold smoke cheese and package it, I wipe any moisture off with a paper towel.

Then I place it in sandwich bags and roll the bag up before I seal it to get as much air out as possible.

I've never had mold...knock on wood!
