First fattie. I used refried beans, sautéed peppers and onions, corn, black beans, chopped jalapeño, diced tomatoes, and some thinly sliced cheddar that I smoked with wine barrel pellets previously. I sprinkled the insides with taco seasoning and rubbed the bacon weave with taco seasoning too.

I'll smoke with mesquite and apple chips at 275 deg F for 2 1/2 hours and brush with maple syrup in the last 30 min. Hope it turns out.

I brushed the fattie with maple syrup diluted with apple juice. It is resting now before I slice it. I'll post a sliced shot soon.

'twas amazing. I couldn't have imagined how good it was going to be. Retried beans really added to it. Topped it with shredded cheddar cheese and a dollop of sour cream. I want to try chicken cordon blue with turkey bacon next
