Nice heat wave here in Ohio last few days and all that jerk chicken talk got me in the mood for some. This is half a pack of 10lb legs broken down with poultry shears. Been slowly tweaking the Cornell base to my liking and it is REALLY dialed in now. Marinaded overnight and liberally mopped at the end. 500F oak in the Smokefire until 180-190F. Took about 40m. Noticed a LOT of neighbors outside at the end. :emoji_laughing:

Funny how that is , seems that when the smoiker is going here , the guy next door seems to have yard work to do after an hour or to into the smoke, lol

But I do send him over a little care package of ribs once in a while.

When you do also look into Roadside Chicken and Fireman('s) Chicken.
They are variations of the Cornell recipe.
The Roadside version omits the egg if that matters to ya.

I do Pops fireman and love it. I like the egg making it adhere to the outside and forming a nice crust
