I wanted to break in the MES with some cheese on this near freezing morning.  I branched out and went a bit exotic.  Here is the selection:

Extra Sharp Cheddar

Horseradish Cheddar

Habanero Cheddar

Buffalo Wing Cheddar

Swiss

Muenster

Parmesan

Asiago

Dubliner

Maytag Blue

Horseradish &Chive Havarti

Brie

5yr Aged Gouda

I don't want to get confused on which cheese is which so I made some labels with some Avery Shipping Labels and made little ID Flags on a toothpick.  Qview looks like little cheese boats on a voyage to smoke Island.

3.5 Hrs with the AMNPS filled with Cherry and Apple Dust.  Temp in the box never went above 79*  MES temp would have been lower but the sun without any clouds today.

Post Smoke, ready to seal for the 2 week slumber.

 
The cheese looks Great!!! How did the Apple/Cherry mix smell? It sounds like it would be really good on cheese, you'll  have to update us on the taste in a few weeks. Oh and where did you get the Buffalo Wing Cheddar? That sounds Awesome and I want some!!!
 
The Cherry/ Apple mix smelled amazing.  May go for the trifecta next and toss in Pecan.

I picked up the Buffalo Wing Cheddar at Wegmans.  It's from Cabot.  I was disappointed though.  It's a block of cheddar drenched in a thick buffalo wing sauce.  We'll see how it turns out.  I'm exited about the 5yr Gouda.

Yea that is disappointing, I was hoping it was infused into the cheese.
