No, the probe sticks far enough through the wood that it dosen't effect the temps. Just a cheap way to keep it off the metal grate. It works good, give it a shot.
for me its been in the 140 - 165 range, when you take it out to foil it it will probably slow down on ya a little too. you were'nt plannin on having an early dinner were you. he he
I think your plateau is generally between the 140-150 mark. If you stick at 159 for too long, and if ya plan to foil at 160, ya just might say "CLOSE ENOUGH! This ain't an exact science! Looks great so far though!
Yeah it's the right pic. I just got done spritzing it before I took the picture so it looks a little wierd. I don't have a ton of bark but there is some.
