Pretty! I've yet to muster the courage to try a brisket.

Jim, jump in the pool. a full packer is an easier more forgiving cook that a flat alone. for your first - see if you can find a smaller one 10lb or less. costs less and cooks faster. I have been running all my briskets at 275F. "hot and fast" and they turn out great.
