First brisket on old country pecos in awhile

Well I did another one Saturday. This time a packer. Put on the fire at 5 a.m. Took off and foiled at 9 p.m. Way longer than an 8 lb brisket should have taken. The "stall" around 160 IT lasted 2-3 hours. It was crazy windy and that made me have to babysit way more than I wanted. It turned out amazing though.

Hi Michael,

Virgil from near Galveston here.  I am looking at the same old country grill.  Now that you have had and used yours for a while, I am curious what you think of it?  I am considering either that one or the next smaller.  Currently using a very small Oklahoma Joe - no firebox and small grill.  Would like something a little bigger and think the firebox is a nice addition.
 
 
For the price I really like my smoker. It works really well and is built well in my opinion. You can get thicker more heavy duty smokers, but you will pay dearly. At this price point I haven't seen any that compare. It has several things built in that people mod on other smokers. Two that come to mind are a heat deflector between firebox and smoke chamber and the smoke stack is down on the level of the cooking grate. I think you will really enjoy it.

Awesome looking brisket!! What type of charcoal did you use and type of wood? Also, about how thick and how long was each split of wood used? Did you ever need to put more coals in? How long did the smoke take? I too am in search of the perfect method for steady temps and TBS
