First brisket on my modded TMLE.

  1. Well I'm jumping in with a full head of steam on this one it's 3AM and my 14 lb creekstone Angus Prime brisket is coming up to room temp. The smoker is lit and coming up to temp. I'll keep you posted.

  2. The Brisket. All trimmed up.

  3. Kosher salt and Morter and Pestal ground black pepper.

  5. All seasoned.

  6. On the smoker.

  7. Lots of waiting now. The brisket went on by 4AM so I expect it to be ready between 4-6PM.

  8. Finished in 11 Hrs. Rested for an hour in butcher paper.

  9. Here it is sliced.

  10. And BOOM!
  11. What temps were you running? What wood(s) did you use? What is the purpose of that big smokestack thingy??
  12. Target temp was 250*F.
    The smoke stack extension is more or less to keep smoke outta everyone's eyes at a all day BBQ. And Post Oak I used Post Oak along with Royal Oak Charcoal.
