Trying out my first brisket today.  It's a pretty small one 3.4KG (7.5#) picked it up at a local butcher.  Cost more than it should have $25/KG (11.33/#) but it should be good meat as it's fresh from a local farm.

Rubbed it with CBP and Salt, used a bbq sauce as a bind then injected with beef stock.

Will update with some pictures through the cook.  Cooking on a COS with Hickory wood.

Started at 5AM:

 
I'm cooking it between 250-275.  But the wind is wreaking havoc on my plans to do that, so it's been jumping between 230-300.

It's currently at 181
 
Ok well it's 12:30 central, I'm not sure on your time zone but I think you'll be fine. You still have 20' or so to go so you're looking at at least 1 pm cenral. Once it's done double wrap in foil and stick it in a dry cooler wrapped in an old towel. It will stay hot for at least four hrs and should get you right where you need to be.
