Hey guys, I'm gonna get right to it. I decided to smoke a 4.5# pork loin and pulled one out of the fridge at 7 this morning. Made a brine and dunked the loin in the bucket about ten till eight and threw it outside. A cold 29* Looked out the window at the themo at 11:30 and read 44*!! Panic stricken I ran out and checked the water with my thermo pen and it said 47*, however I just so happened to do a boil test on it and it is about 9* off. Should be fine right?? Then I thought well, what about the meat, so I jabbed...... instantly I realized I should have left well enough alone as it was close to the four hour mark. But then again 9-47 is 38* right..... no reason to panic right??

Mike you should be fine, meat warms up more then that getting a pellicle

As long as you are hot smoking it you should be fine. I'm sure the outside temp didn't jump from 29 to 44 instantly. It had probably only been over 40 for an hour or two.

Your absolutely right, but I started second guessing myself (hate it when that happens)
