thanks, glad I put them on with the items for the gumbo(turkey legs, chicken wings, kilbasa).

I marinated them in a hoisin marinade, and am going to basre them with some of the marinade during the smoke.
 
Nobody likes that green roof lol :)

Cool hope they turn out great. Never tried turkey legs, I'll be interested how yours come out!

Can't believe no one else mentioned this, or maybe I missed it....ALWAYS put chicken beneath other meats when using a vertical style smoke. Bacterial issues demand this.

I tend to like my beefies med-rare, so 4 1/2 hours usually does it, doing at 250º though. Beefies are great.
 
I do that too, just thought I was parnoid :)
 
turkey legs ame in at 3 hours total.

really nice, and will be a great adder to the gumbo.

beef ribs are basically done. I pulled one for a taster, and it was nice. foiled the rest to get them a bit more tender.

beef ribs will be about 6 hours.
