Thanks to all the posts on this website, my first shot at Canadian Bacon turned out so GREAT!!!!

A few photos below from the process - 2 weeks in the brine, smoked and ready for packing.










 
Gotta love bacon. Looks great. You're like me when it comes to bacon....if you're gonna make bacon, make a lot of bacon! I've got 20 lbs of canadian, 20 lbs of BB, and 5 bellies curing right now.
 
That is the way to do it, quantity, need mass quantities of bacon
