This is a longshot but I got into a sausage recipe conversation in which a guy recalled a fresh pork sausage that had bell pepper as a dominate flavoring. He thought it could have been Italian or Mediterranean in origin, but was not sure. Does this ring any bells?
 
Are we talking fresh sausage here? I have a calabrian fresh italian sausage recipe that uses a bell pepper paste as one of the dominate flavors.
Yes, a fresh pork sausage. Will you post the recipe, it might be a starting point.
