First off I will apologize for the lack of photos in this post but I wanted to share what I had.
Had been trying all week last week to figure out what to cook for fathers day. I already had a grad party BBQ planned for this coming weekend and July 4th the following so didn't want to do BBQ or just burgers and dogs. Hit me one day that fajitas would be great.
Started out Saturday getting most of the prep work done. Made a batch of avocado ranch and salsa a la
tx smoker
. Was kind enough to share his recipes with me and they did not disappoint. Only difference is he smokes his veggies prior to blending. Ran out of time and just made it regular and it was delicious.
Cut up 4 1/2 pounds of chicken, a 2 1/2 pound sirloin tip roast I had in the freezer, and even defrosted out a pound of shrimp. Marinated in a mix between
xray
and
chilerelleno
fajita marinades for 8 hours. The shrimp only got an hour. No pics here.
Started out with some tortillas getting a little heat.
Next up is the peppers and onions.
Got a little sloppy here with the pics. Everything cooks so quick and I was talking to family while I was trying to cook so ended up only getting the chicken on the flat top.
Hot day don't want to get dehydrated.
Here is most of the spread. Another big shout out to

. That is a pan of his Mexican rice in the lower right corner. I got more compliments on this than anything else so if you are looking for a recipe look no further.
A couple fajitas. Made white queso dip(which I didn't get a picture of) and threw some on top. Rice I already mentioned and the refried beans were also compliments of
chilerelleno
. They look dried out but I can assure you they weren't at all. Beans cooked in bacon grease...how can you go wrong?
Had to have some chips with the homemade salsa, avocado ranch, and white queso.
Sent a nice little care package to the elderly neighbors who couldn't make it.
This meal was off the charts good. And almost all of the recipes I got were shared by forum members. Great way to spend Fathers Day with the kids and family. Hope everyone else had a good one too. Thanks for looking.
