I've smoked meats befor with a chip box on my grill and with a friends MES.  This week I took the plunge and got my own SFB Charbroil.

Been doing a ton of reading here and taking notes.  There is somegreat info and BBQers here. 

I did all the usual mods during the initial assembly.  chimney extension, tuning plates, sealing, new therms, charcoal box, paint, etc.  

I did a seasonong smoke on it the other day.  

Today is the first smoke on it.  Put down a spatchcocked chicken and a bacon onion cheeseburger fattie.

I'll add some QView later on.  Raw chicken pictures arent very impressive.

Sounds like you have done some home work..... They take a little extra attention, but are worth it.... The single most important mod I did was the charcole basket...

The smoke is complete and our bellies filled.  Now I'm tired.

Fattie was good.  Could have been better, but this was just to satisfy my urge to make one.

Chicken came out good.  Texture was good and it had just the right amount of smoke flavor.  Finished off on the Weber grill at 375 for about 20mins to crisp up the skin.

Tody was a good learning experience.  Figured out a few adjustments that need to be made to the smoker.  The temp was pretty even side to side, but I need to make adjustments to the baffle and tuning plates.  I think the baffle may need to be opened up a bit. 

I have Qview to add when I get to the PC.

Great looking food..... now on to the tuning and the unfortunate task of tasting more food....that just makes for a rough time....oooohhh darn the tourture.........
