Dang you,haha. Perfect timing. Im just venturing into the hot sauce making hobby this weekend. I couldn't resist. Just ordered.
A have many hot sauce fermentation questions. I posted a couple of the questions in another thread. I was hoping to get started this weekend with some ghost pepper hot sauce.

Best sauce making purchase I ever bought was the Vitamix E320. No more straining skins, it just obliterates seeds and skins.
2 weeks ago I threw in 2 pounds of roasted (scraped them 1st) hatch chilies with seeds still in them, onion, cilantro, and fresh squeezed lime juice.

Started the blender on low and just turned it up as it went and turned the whole mess of peppers into a paste without having to add any water because ramped it up "slowly".
 
Just needing some advice. I received the blender and during the first use, it shakes and vibrated quite bad.
I had pineapple, ginger, beets, celery, ginger, turmeric, lemon juice and water in it. I started it on the lowest speed and as I increased the speed it started vibrating and shaking. As I increased the speed it got worse so I had to play with the speed up and down until it finally settled down.
Sorry for the long banter but, is this normal?

I don’t have that one , but I’ve had experience with something getting stuck on the blade that didn’t cut through . Throws the machine out of balance . Just check for that if it happens again .

I've not had issue with vibrating but I do cut things up fairly small when I blend. How large were the beets and were they cooked? Good news is the warranty and their customer service is great if you do have a bum unit.

I chopped everything about the size of a quarter. Added lemon juice and a cup or so of water. This is the 3rd time using the blender and have had the same thing happen each time.
I reached out to them and am waiting on thier reply.

This is the 3rd time it's happened. It almost seems the blade and or motor are out of balnce. If that even possible.
