My practicality side says "wsm will do ya fine and it will be just as great without any major renovations. Out the box, good to smoke"
But man I wanna big ole offset. When family comes over, it's like having a corvette in the drive. Show off ya toys! Any major difference by way of flavor in smoke between the two? EMS is by far the most practical for me, but should I just buck up and learn me the offset?
