We were in Texas for 2 weeks.

Came back to many fresh eggs.

Have you actually done it? All the Internet personalities say they do it, but we did it once and the eggs have a strange salty flavor to us. Do they actually taste fresh to you?

Can you recommend a method? Maybe we used to much lime?
We were in Texas for 2 weeks.

If you don't already make them, frittata is our favorite was to use um up. Our family can eat 18 eggs in a sitting. Quiches are nice, but are more work and don't use nearly as many eggs.
 
Ha! Just counted the cartons, 12 dozen!
If we get past 6 doz, we just walk around the neighborhood with a basket. Don't make it very far before they are all gone.

We have done it and while they are not the same as fresh, they are still better than store bought. We didn't notice an over powering saltiness. My wife handles the exacts but I don't think we used just a ton of pickling lime.
 
I just bought 2lbs of pickling lime, I have a 5 gallon food grade bucket and many 1 gallon glass jars.

I'm going to water glass em.

1oz of lime to 1 qt filtered water.

Have you done water glassing? I've heard about it but haven't tried it. And I'm at that point. We are getting more eggs than we can handle.
 
My wife does it. The thing she says is that while some people do like five gallon buckets of them she likes smaller batches in case something goes wrong we won’t lose that many eggs. They do not taste like fresh but they do taste good. We don’t use them long but it is nice when the girls slow down.

this is a random explanation of water glassing eggs. It seems pretty good and thorough.
I've heard good and bad things about it, I want someone to be the guinea pig and let me know lol
