I know you cannot add eca, then put mixture of sausage in fridge for a day or so, but can you put nfdm or buttermilk powder in the mixture, before you let it sit in the fridge? or do you mix it in just before you stuff, and smoke. little confused here, I recently bought all these products never used any of these.

I use nfdm , or fermento mix it in and let it sit over night . Not a problem .
 
Adding binders/fillers and letting the meat sit in the refer overnight... The meat sets up into a stiff mass... can make stuffing into casings a bit tough.... I prefer to mix in the spices and cure into chunked meat, grind... then hand mix in any binders and eca and stuff into the casings... chop-chop.... then into the smoker at 100 ish, no smoke for 1/2 hour or so... cool smoke for a few hours 120-140... then up the temp, no smoke, to finish the cook, 160 for up to 24 hours.....

Agree,,, I only do it after it has been stuffed . If I season the meat and let it sit , I wait to add the binder just before stuffing . I should have been more clear .
 
does it taste better to let the sausage sit in the fridge over night to let the seasonings do its thang, then add eca to the meat then stuff. or can you add nfdm or buttermilk powder to the meat then stuff and let sit in the fridge overnight?

The easiest is to stuff with everything and let sit in the refer for 1 or 2 days... I would cover with plastic wrap so the casing don't dry out ... dried out casings can be tough to chew... lose their snap... maybe cover with a damp paper towel and refresh that towel every 12 hours or so... Now ECA..... that's a different deal... The coating could and very well might dissolve and then your meat dissolves... ECA stuffed sausage needs to see the smoker quickly...
