I ended up making some lollipops for Easter dinner along with some stuffed potatoes that turned out really good. I'll take you through the steps I take to make the lollipops.
The first thing I do is pull the skin back so I can season them under the skin with some rub.
Pulled pack
Then the rub
Then pull the skin back over the meat.
Now for the fun part. Cut around the bone and remove the cartilage and tendons and the small pin bone running alongside the bigger bone.
This is all the removed parts and what the drumstick should now look like.
All done with that part thank god! Actually this was not that bad...i did these for a group of 30 people one time and I'll never do that again! Lol! There was one in the pack that already didnt have any skin so I just seasoned that one.
Season the outside with salt and pepper then wrap the bones in foil so They dont get too dark in the smoker
In to the pan with some melted butter.
Ok those are on the UDS . Now for the potatoes. I started with some pretty small russet . cleaned real good then nuked in the microwave.
Here you can see the size
Sliced in half and scooped out the inside.
Then I mixed equal parts cream cheese and sharp cheddar for the filling. Filled then put back together
And then of course wrap with bacon.
Okay lollipops are out of the smoker and ready to be glazed
They went back on the smoker on the rack for about 30 minutes maybe a little bit longer. Then when they come out they get one more dunk in the glaze
About that time to potatoes are ready to come off too
I also made some broccoli and cauliflower casserole it was a pretty basic dish but I didn't take any pictures of it while making it. While I was plating up my plate I couldn't resist biting into one.. that's one clean bone if you ask me!
And finally a plated pic........
Here is a close up of the potatoes. They were awesome!
And here is a pic to show how well the bite through skin is.....
