i'm sippin'- as a far as a pirate sips... i am doing a brisket & would hate to screw it up... i may get a silly posting but i "guarantee"/// the food will be good....
 
new pics up- 8 hrs- the brisk is @ 154f - made a to go platter for business... gonna do anopther platter when the brisk is done- btw- the fatty thing is a "sold" item & orders coming & getting behind now....14 lbs of omelette fatty pre ordered in 10 mins....
 
just waiting on the brisk- pulled(offthe fire) @ 171- foiled & wrapped in a wet towel in the cooler until in the morning- then cool enough to slice _w/ the new slicer) pics to finish tomorrow - then submit to the the smoke contest...
 
Debi-if yaget to some to summersville- i'll get ya a good brisket & save unit 2 just for you to use.for whatever you want to cook up.let the masses know just how i can be humbled.....hehe. love ya mom.

p.s. - yeah i know the docs & books advise against it.. but aimee was gnawing on my smoky fingers so we gave her an unspiced- low smoke rib to gnaw on- looka dat face.tell me 11 wks is too young fer Que..... i was born in july & got my 1st turkey leg in thanks-G OF '68 6 mo's old...

Gypsy.....Great looking grub. Is that all on one snp? What is the heat difference from end to end on your snp? Again..I'm drooling at the O-Views.
 
Sounds like mine. About 10/15 degrees difference on the right side. Still moding mine, so I'll see if it makes a difference. Thanks.
