I am planning my next winter project and think I am in need of a sausage curing cabinet.
I have read some DIY builds and most seem to use an old, but working, refrigerator that they modify with thermal and humidity controls.
Seeing as the temperature needed for dry cure sausage is in the 60 degree F range, a small powered cooling system should be adequate for dry curing sausages in most climate zones. No need to run and pay for a very oversized compressor for such a small amount of cooling.
That said, I am thinking of designing my own cabinet using an old refrigerator and controlling the cooling using a thermoelectric cooling module.
This would give me the freedom of using any kind of fridge that I can get, working or not.
It would also give me a much more friendly way to get rid of vapor condensation.
My issue is that I am very good with electronic control systems but my metal working skills leave much to be desired.
Would anyone be interested in a collaborative effort in crafting one of more of these units? I do the electronics and you do the sheet metal work?
Even if you can't or are not interested in helping, I can provide information on where to buy the electronics you will need to pull this off.
