I did a batch of canadian bacon the other day and finally tried some out this morning . Most of it I gave away but I kept a couple pieces . Turned out really good . Everyone have a great 4th

Curious to your recipe and process.
 
I used the Sqwib method . Ive used this method a few times and had great results . I do add a couple days cure time to be on the safe side . I used some cherry sawdust for 1 1/2 hours . The smoke taste isnt overpowering and I think has a nice color . Give it a try , Ive always had good luck with it
