Dried minced garlic/onion

I've used both extensively in jerky making and never rehydrated. Especially good with ground jerky. Onion is powerful but not obnoxious. I use this garlic when I am too lazy to chop fresh.
I rehydrated because it was the first time I had ever used them for sausage. I didn't want them to suck the moisture out of my sausage. I have used them in other cooking and always rehydrate them.

This garlic was minced and dried. I re-hydrated it with the dried minced onion. It worked very well.
I've actually done that with onions . Chopped and dried in my MES 30 . I'll have to try it with garlic .
I've been buying Freeze dried sage to use in sausage . I let it rehydrate in the meat paste , but always add some liquid to the minced onion if using in hash browns or they like to burn . Anything I add to sausage brings some moisture with it .
